« Broccoli and Cavolo Nero Soup »


Sweat an onion, a pepper, a clove of garlic, carrot and celery. Add a diced potato, broccoli and cover with water. Simmer until all is tender. Add ribbons of Cavolo Nero or other greens. Season with salt and pepper, cumin, coriander, with a hit of mace or nutmeg. Whir it up with a hand blender and serve over cherry tomatoes. Garnish with salty cheese and serve with a crusty loaf of bread.
